re-think protein

Forget the idea that you can only get protein from meat. It just isn’t true. Now, if you know me at all, you know I’m not protein-powder-shaker-gymshark-dude. Not even close. But a breakfast that leaves me feeling full and focused is important, so that I can get my work done between breakfast and lunch.

Protein powder is a great way to get me through the morning. I love to bake, so when I don’t have a smoothie, I find that hearty breakfast muffins are the perfect place to sneak in some extra protein! There’s a recipe for them below.

If you’re not into baking, that’s cool, because Botanica Perfect Protein is pretty darn perfect in shakes too!

Recipe: Vanilla plant-based Protein Breakfast Muffins

Ingredients
— Wet Ingredients —
  • 1 cup non-dairy milk
  • 1/2 cup almond butter
  • 1/4 cup applesauce
  • 1/2 cup maple syrup
  • 1 tsp vanilla (optional)
  • 1/2 cup grated carrot
— Dry Ingredients —
  • 2 scoops Botanica Perfect Protein – Vanilla
  • 1 cup oats
  • 1 cup flour
  • 2 tbsp ground chia
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
Instructions
  1. Preheat oven to 350F.
  2. Combine the wet ingredients and the dry ingredients separately.
  3. Either by hand or with a stand mixer, combine the dry with and wet until there are no dry spots.
  4. In either a loaf pan or muffin try, grease or line with baking cups. Fill with batter.
  5. Bake 30-35 minutes, checking with a toothpick at the 30 minute mark. It will come out clean from the centre when they are done. Muffins will cook quicker than a large loaf.
