I’ll be honest, I don’t really shy away from sugar. I don’t need more reasons to disappoint myself, so right now my sugar consumption is what it is, you feel me? Forget the idea that you can only get protein from meat. It just isn’t true. Now, if you know me at all, you know I’m not protein-powder-shaker-gymshark-dude. Not even close. But a breakfast that leaves me feeling full and focused is important, so that I can get my work done between breakfast and lunch.
Protein powder is a great way to get me through the morning. I love to bake, so when I don’t have a smoothie, I find that hearty breakfast muffins are the perfect place to sneak in some extra protein! There’s a recipe for them below.
If you’re not into baking, that’s cool, because Botanica Perfect Protein is pretty darn perfect in shakes too!
Recipe: Vanilla plant-based Protein Breakfast Muffins
— Wet Ingredients —
- 1 cup non-dairy milk
- 1/2 cup almond butter
- 1/4 cup applesauce
- 1/2 cup maple syrup
- 1 tsp vanilla (optional)
- 1/2 cup grated carrot
— Dry Ingredients —
- 2 scoops Botanica Perfect Protein – Vanilla
- 1 cup oats
- 1 cup flour
- 2 tbsp ground chia
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- Preheat oven to 350F.
- Combine the wet ingredients and the dry ingredients separately.
- Either by hand or with a stand mixer, combine the dry with and wet until there are no dry spots.
- In either a loaf pan or muffin try, grease or line with baking cups. Fill with batter.
- Bake 30-35 minutes, checking with a toothpick at the 30 minute mark. It will come out clean from the centre when they are done. Muffins will cook quicker than a large loaf.
